Located on Anban Street near East Street in central Xi’an, De Fa Chang Dumpling Restaurant (Defachang) is one of the city’s most famous traditional restaurants. Established as a renowned dumpling restaurant, it is best known for its unique dumpling banquet, which combines traditional Chinese cooking techniques, creative designs, and rich cultural stories.

According to tradition, the recipe originated from the Tang Dynasty imperial court and was passed down through generations. The wine has:

Shark Fin Dumplings

According to legend, this dumpling was created when Empress Dowager Cixi visited Xi’an and requested a special dish from her chef. The new dumpling impressed her greatly.
She ate the dumplings in groups of three, six, or nine because these numbers symbolize good fortune in Chinese culture.
